Ingredients
For the Chicken
- 1 whole chicken (opt for free-range for enhanced flavor)
- to taste tablespoon salt
- 2 inches fresh ginger
For the Rice
- 1 cup jasmine rice (substitute basmati for a unique twist)
- 3 cloves garlic, minced
- 2 inches fresh ginger, sliced
For the Garnish
- 1 piece cucumber (can swap with radish)
- 1/4 cup fresh cilantro
For the Sauce
- 1 tablespoon soy sauce (adjust based on salt preference)
- 1 teaspoon sesame oil (use sparingly)
Instructions
- Poach the Chicken: Bring a large pot of water to a boil. Add salt and the 2-inch piece of fresh ginger. Lower the whole chicken gently into the simmering water and poach for about 30 minutes, or until fully cooked and tender.
- Prepare the Broth and Cook the Rice: Remove the poached chicken from the broth. Strain the broth and return 2 cups of it to the pot. Bring the broth back to a boil and add 1 cup jasmine rice, sliced ginger, and minced garlic. Cook for approximately 15 minutes, until the rice is tender and infused with the broth's flavor.
- Make the Sauce: In a small bowl, whisk together the minced garlic, soy sauce, and sesame oil. Adjust seasoning to taste, being mindful of salt levels.
- Assemble the Dish: Slice the cooked chicken into serving pieces. Arrange the sliced chicken over the fragrant ginger-garlic rice. Garnish with fresh cucumber slices and cilantro. Drizzle the prepared soy-sesame sauce over the chicken and rice for added flavor.

- Adjust soy sauce quantity in the sauce based on your salt preference.
- For a unique twist, basmati rice can be used instead of jasmine rice.
