Ingredients
Vegetables & Potatoes
- 1 pound small red potatoes, halved
- 6 mini ears corn on the cob
- 1 medium red onion, diced
- 5-6 cloves garlic, chopped
Seafood & Meat
- 2 pounds (900g) snow crab legs, thawed
- 1 pound (450g) raw large shrimp, deveined
- 16 ounces (450g) smoked andouille sausage, sliced into 1-inch diagonal slices
- 6 whole hard-boiled eggs
Sauce & Seasonings
- 2 sticks (240g) unsalted butter (1 cup)
- ½ cup chicken broth
- 2 tablespoons Old Bay seasoning
- 1 tablespoon Creole seasoning
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 tablespoon parsley, chopped
- 2 tablespoons (30ml) fresh lemon juice (adjust to taste)
- Salt and pepper to taste
Instructions
- Boil potatoes and corn: Bring a large pot of salted water to a boil over medium-high heat. Add halved potatoes and mini corn ears to the pot and cook for 12-15 minutes or until potatoes are fork-tender and corn kernels turn a deep yellow and plump.
- Cook andouille sausage: Slice andouille sausage into ½-1 inch diagonal pieces. Heat a skillet over medium-high heat, then add sausage slices and cook for 3-5 minutes until slightly browned. Remove and set aside.
- Make garlic butter sauce: In the same skillet, melt butter over medium heat. Add diced red onion and chopped garlic and sauté for about 5 minutes, until the onion is translucent. Stir in chicken broth, Old Bay seasoning, Creole seasoning, paprika, and cayenne pepper. Reduce heat to low and simmer for 5-7 minutes. Season with salt, pepper, fresh lemon juice, and chopped parsley, stir well, then remove from heat.
- Prepare oven bags: Preheat oven to 400°F (205°C). Place oven bags inside a large bowl to stabilize them for filling.
- Assemble seafood boil in bags: Divide snow crab legs, shrimp, cooked andouille sausage, hard-boiled eggs, boiled potatoes, and corn evenly into the oven bags. Drizzle the prepared garlic butter sauce over the ingredients. Seal the bags securely and gently toss the contents inside the bags to coat everything evenly with the sauce.
- Bake seafood boil: Place the sealed bags on a baking sheet and bake in the preheated oven for 15-20 minutes until the shrimp are cooked through and the flavors meld.
- Serve and enjoy: Carefully cut open the bags (watch for steam) and serve the seafood boil directly on plates or on a large communal platter for an eye-catching and delicious meal.
Notes
- Make sure to thaw crab legs completely before assembling.
- Adjust cayenne pepper to control spiciness.
- Hard-boiled eggs add a nice texture contrast but can be omitted if preferred.
- Use gloves when handling and tossing the bags to avoid burns from steam.
- Old Bay and Creole seasoning can be substituted with your favorite Cajun spice blend.
