  • Total Time: 40 min
  • Yield: 20 fritters

Ingredients

Garnish

  • 2 green onions, cut into fine julienne

Lime Mayonnaise

  • 1/3 cup (75 ml) mayonnaise
  • ½ lime, zest finely grated
  • 2 tsp lime juice

Fritters

  • ¾ cup (115 g) unbleached all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 tsp sweet paprika, plus more for serving
  • 1/8 tsp cayenne pepper
  • 1 egg
  • 6 tbsp (90 ml) water
  • 7 oz (200 g) frozen Nordic shrimp, thawed and chopped
  • 2 green onions, finely chopped
  • 2 garlic cloves, finely chopped
  • Vegetable oil, for frying

Instructions

  1. Prepare the Lime Mayonnaise: In a small bowl, combine the mayonnaise with the finely grated zest of half a lime and 2 teaspoons of freshly squeezed lime juice. Mix well and refrigerate to allow the flavors to meld while you prepare the fritters.
  2. Mix the Dry Ingredients: In a medium bowl, whisk together the unbleached all-purpose flour, baking powder, salt, sweet paprika, and cayenne pepper until well combined.
  3. Add Wet Ingredients and Create Batter: Crack the egg into the dry mixture and add 6 tablespoons of water. Stir until the batter is smooth and slightly thick but still spoonable.
  4. Incorporate Shrimp and Aromatics: Fold in the chopped Nordic shrimp, finely chopped green onions, and garlic cloves into the batter carefully, ensuring even distribution without overmixing.
  5. Heat Oil for Frying: Pour vegetable oil into a large frying pan to a depth of about half an inch and heat over medium heat until the oil shimmers and a drop of batter sizzles upon contact.
  6. Fry the Fritters: Using a spoon, drop small dollops of batter into the hot oil, flattening slightly to form fritters. Fry in batches to avoid overcrowding the pan. Cook each fritter for about 2-3 minutes on each side or until golden brown and cooked through.
  7. Drain and Keep Warm: Remove the fritters with a slotted spoon and place them on a paper towel-lined plate to absorb excess oil. Keep warm in a low oven if necessary while frying the remaining batter.
  8. Serve: Arrange the fritters on a serving platter, sprinkle with additional sweet paprika and the julienned green onions for garnish. Serve hot with the chilled lime mayonnaise on the side for dipping.

Notes

  • Make sure the shrimp is fully thawed and chopped into small pieces for even frying.
  • Maintain medium heat while frying to ensure the fritters cook evenly without burning.
  • These fritters can be frozen after frying. Reheat in an oven to maintain crispiness.
  • Adjust the cayenne pepper amount to suit your spice preference.
  • The lime mayonnaise can be made a day ahead to deepen the citrus flavor.
