Ingredients
Cornbread Batter
- 2 (17 oz) boxes Jiffy Corn Muffin Mix
- 2 large eggs
- 2/3 cup milk
Sloppy Joe Filling
- 1 lb ground beef
- 1 (15 oz) can Manwich Sloppy Joe Sauce
Instructions
- Preheat and Prep: Preheat your oven to 400°F (200°C) and grease a 9×13-inch baking dish to ensure the casserole doesn’t stick.
- Make Cornbread Batter: In a large mixing bowl, combine the Jiffy Corn Muffin Mix with the eggs and milk. Stir the mixture thoroughly until it forms a smooth, well-blended batter, then set it aside while you prepare the filling.
- Make Sloppy Joe Filling: Heat a skillet over medium heat and brown the ground beef until no longer pink, breaking it up as it cooks. Drain any excess grease, then stir in the Manwich Sloppy Joe Sauce. Let the mixture simmer for about 5 minutes to thicken and meld flavors.
- Assemble Casserole: Spread the sloppy joe meat mixture evenly across the bottom of the prepared baking dish. Carefully pour and spread the cornbread batter on top, creating an even layer to cover the meat filling.
- Bake: Place the casserole in the preheated oven and bake for 20 minutes, or until the cornbread topping is a beautiful golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and let it cool slightly before serving.
Notes
- You can substitute ground turkey or chicken for a leaner option.
- For a spicier version, add a pinch of cayenne pepper or chopped jalapeños to the sloppy joe mixture.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated.
- If you don't have Manwich sauce, you can make a quick homemade sloppy joe sauce with ketchup, Worcestershire sauce, and a bit of brown sugar.
