Ingredients
For the crust (if homemade):
- 1 ¼ cups All-purpose flour
- ½ cup (1 stick) Unsalted butter, cold and cubed
- ¼ tsp Salt
- 2-4 tbsp Ice water
- You may also use a store-bought 9-inch pie crust or puff pastry.
For the filling:
- 2 large Pears peeled, cored, and thinly sliced
- ¾ cup Fresh or frozen cranberries
- ⅓ cup Brown sugar packed
- 1 tbsp Lemon juice
- 1 tsp Lemon zest
- 1 ½ tbsp Cornstarch
- 1 tsp Ground cinnamon
- ¼ tsp Ground ginger
- ⅛ tsp Nutmeg
- ⅛ tsp Allspice
- ½ tsp Vanilla extract (optional)
For finishing:
- 1 Egg beaten (for egg wash)
- 1 tbsp Coarse sugar for sprinkling
Instructions
- Prepare the Dough: If making your own pie crust, combine the flour, cold cubed butter, and salt in a food processor or by hand, blending until the mixture resembles coarse crumbs. Add ice water tablespoon by tablespoon until the dough just comes together. Shape into a disk, wrap in plastic wrap, and chill for at least one hour to ensure a flaky crust.
- Prepare the Filling: In a large bowl, mix thinly sliced pears, cranberries, brown sugar, lemon juice, lemon zest, cornstarch, ground cinnamon, ground ginger, nutmeg, allspice, and vanilla extract if using. Toss gently until fruits are evenly coated and the mixture is well combined.
- Roll Out the Dough: On a lightly floured surface, roll out the chilled dough into a roughly 12-inch circle about 1/8 inch thick. Transfer the dough carefully onto a parchment-lined baking sheet.
- Assemble the Galette: Spoon the fruit filling into the center of the dough circle, leaving about a 2-inch border around the edges. Fold the edges of the dough over the filling, pleating as needed to create a rustic edge while keeping the center exposed.
- Apply Egg Wash and Sugar: Brush the dough edges generously with the beaten egg to promote browning and sprinkle with coarse sugar to add crunch and sparkle to the crust.
- Bake the Galette: Preheat your oven to 375°F (190°C). Bake the galette on the middle rack for approximately 40 minutes or until the crust is golden brown and the filling is bubbly and cooked through.
- Cool and Serve: Allow the galette to cool slightly on the baking sheet for about 10 minutes. Serve warm, optionally with a scoop of vanilla ice cream or whipped cream for added indulgence.
Notes
- You can use a store-bought pie crust or puff pastry to save time.
- Frozen cranberries are fine to use, just thaw slightly before mixing.
- Adjust spices according to preference; you can add a pinch more cinnamon or ginger for additional warmth.
- For a vegan version, substitute the egg wash with a plant-based milk or melted coconut oil and omit vanilla extract if desired.
- Make sure the pears are ripe but firm to avoid a mushy filling.
