Ingredients
Chicken Patty Mixture
- 1 lb lean ground chicken
- 1 teaspoon ground cumin
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 tablespoon diced jalapeno (seeds removed)
- Juice of 1 lime
- 1 tablespoon olive oil
- 2 green onions, sliced (both whites and greens)
- ¼ cup feta cheese
For Serving
- 4 hamburger buns
- Chipotle mayonnaise or sauce of choice
- Sliced red onion
- Sliced avocado
- Lettuce
- Sliced tomatoes
Instructions
- Make the chicken patty mixture. In a medium mixing bowl, combine the lean ground chicken, ground cumin, salt, black pepper, paprika, garlic powder, diced jalapeno (with seeds removed), lime juice, olive oil, sliced green onions, and crumbled feta cheese. Mix all ingredients well to evenly distribute the spices and cheese throughout the meat.
- Form the patties. Divide the mixture into 4 equal portions. Using your palms, gently shape each portion into a ball and then flatten to make about ¾-inch thick chicken patties, taking care not to compress them too tightly so they stay juicy.
- Cook the burgers on the BBQ. Preheat the grill to medium-high heat (approximately 400°F). Grill the patties for 5-8 minutes per side, flipping halfway through, until the internal temperature reaches 165°F and the patties are fully cooked with a nicely charred exterior.
- Cook the burgers on the stovetop. Heat about 2 teaspoons of olive oil in a large skillet or frying pan over medium heat. When hot, place the patties in the pan without crowding them. Cook each side for 4 to 5 minutes until browned, then flip and cook for an additional 3 minutes until golden brown and fully cooked through.
- Assemble the chicken burgers. Place each cooked chicken patty onto a hamburger bun. Top with chipotle mayonnaise or your sauce of choice, then add lettuce, sliced tomato, sliced red onion, and sliced avocado. Serve immediately and enjoy your spicy feta chicken burgers.
Notes
- To increase the heat and spice, add 1 teaspoon of sriracha sauce and an additional tablespoon of diced jalapenos to the chicken mixture.
