These Spicy Feta Chicken Burgers are a perfect summer dinner, boasting a flavorful blend of lean ground chicken, feta cheese, and a kick of jalapeno. Perfect for BBQs or stovetop cooking, they are gluten-free and packed with protein, offering a tasty and healthy meal option.

  • Total Time: 30 minutes
  • Yield: 4 burgers

Ingredients

For the Chicken Burgers

  • 1 lb lean ground chicken
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon diced jalapeno, seeds removed
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • 2 green onions, sliced (both whites and greens)
  • ¼ cup feta cheese

For Serving

  • 4 hamburger buns
  • Chipotle mayonnaise or sauce of choice
  • Sliced red onion
  • Sliced avocado
  • Lettuce
  • Sliced tomatoes

Instructions

  1. Prepare the chicken patty mixture: In a medium mixing bowl, combine the ground chicken with ground cumin, salt, black pepper, paprika, garlic powder, diced jalapeno, lime juice, olive oil, green onions, and feta cheese. Mix everything thoroughly until all ingredients are evenly incorporated.
  2. Shape the patties: Divide the chicken mixture into 4 equal portions. Using your palms, gently form each portion into a patty approximately ¾ inch thick, ensuring they hold together well.
  3. Cook on the BBQ: Preheat the grill to medium-high heat, about 400°F. Grill the patties for 5 to 8 minutes on each side or until the internal temperature reaches 165°F and the burgers are cooked through.
  4. Or cook on the stovetop: Brush a large skillet with 2 teaspoons of olive oil and heat over medium heat. Place the patties in the skillet without crowding them. Cook for 4 to 5 minutes on one side until browned, then flip and cook for an additional 3 minutes until golden brown and fully cooked.
  5. Assemble the burgers: Place each cooked chicken patty onto a hamburger bun. Top with chipotle mayonnaise, lettuce, sliced tomato, red onion, and avocado as desired. Serve immediately and enjoy!

  • Nutrition information provided excludes the bun and toppings. Adjust as necessary depending on your choice of bun and additional ingredients.
  • Ensure chicken is cooked to an internal temperature of 165°F for food safety.
