Ingredients
For the Pastry and Preparation
- Flour, for dusting work surface
- 1 sheet (half of a 13.7-oz. box) frozen puff pastry, thawed
- 1 large egg, whisked with 1 Tablespoon water (for egg wash)
- Sanding sugar, for topping (optional)
For the Fruit Filling
- 2 1/2 cups sliced strawberries or other fruit(s) (e.g. blueberries, peaches, plums, apples, blackberries)
- 1 Tablespoon sugar, plus more to taste
- 1 teaspoon lemon zest
- 2 Teaspoons fresh lemon juice
- 1 Tablespoon cornstarch
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking and allow for easy cleanup.
- Roll Out Puff Pastry: Lightly flour your work surface, then unfold the thawed puff pastry sheet. Using a rolling pin, roll it out gently until it reaches a 10-inch square. Optionally, round off the corners of the square. Transfer the pastry carefully to the prepared baking sheet.
- Prepare Fruit Filling: In a medium bowl, combine the sliced strawberries (or other chosen fruit), sugar, lemon zest, lemon juice, and cornstarch. Stir until everything is evenly mixed and the fruit is coated well to help thicken the filling during baking.
- Assemble the Galette: Spoon the fruit mixture into the center of the puff pastry, leaving about a 2-inch border around the edges free of filling. Fold the edges of the pastry up over the filling, overlapping slightly as needed and pressing lightly to secure the folds.
- Add Egg Wash and Sugar Topping: Brush the folded pastry edges and top of the galette with the whisked egg wash to achieve a shiny, golden crust. Sprinkle sanding sugar over the egg-washed pastry for added sparkle and sweetness, if desired.
- Bake the Galette: Place the galette in the preheated oven and bake for 25 to 30 minutes, or until the pastry is golden brown and the fruit filling is bubbling actively.
- Cool and Serve: Remove the galette from the oven and allow it to cool completely on the baking sheet. Cooling helps the filling set, making it easier to slice. Serve as is or with a scoop of vanilla ice cream or whipped cream if you like.
Notes
- You can customize this galette with virtually any combination of fruits such as peaches, plums, apples, blackberries, and blueberries.
- Adjust the sugar amount based on the sweetness of your chosen fruit; less sweet fruit may require more sugar.
- Juicier fruits may need extra cornstarch to prevent a runny filling and ensure a nice jammy consistency.
- Allow the galette to cool fully before slicing to help the filling set and prevent it from spilling.
- Optional sanding sugar on top adds a delicate crunch and a sparkling finish.
