Ingredients
Dry Ingredients
- 1¼ cups all-purpose flour
- 3 tablespoons cornstarch
- ½ teaspoon salt
- ½ teaspoon baking soda
Wet Ingredients
- ½ cup cold butter (1 stick), cut into smaller pieces
- 6 tablespoons granulated sugar
- 6 tablespoons brown sugar
- 1 large egg
- ½ teaspoon vanilla extract
Add-ins
- 10-11 oz semi-sweet chocolate chips (1 bag, or half a bag for less chocolate)
- ¼ cup walnut pieces (optional)
Instructions
- Preheat the oven: Set your oven to 475°F (246°C) and prepare baking sheets lined with parchment paper to prevent sticking.
- Mix dry ingredients: In a smaller bowl, whisk together the flour, cornstarch, salt, and baking soda until evenly combined.
- Prepare wet ingredients: Cut cold butter into smaller pieces and place them in a larger mixing bowl. Add granulated sugar, brown sugar, egg, and vanilla extract. Using an electric handheld mixer, combine until smooth and creamy.
- Combine wet and dry ingredients: Gently stir the dry flour mixture into the butter and sugar mixture, folding in gradually until just combined to avoid overmixing.
- Add chocolate chips and walnuts: Fold in the semi-sweet chocolate chips and optional walnuts evenly throughout the dough.
- Form cookie dough balls: Using a tablespoon, scoop and shape dough balls, placing them spaced apart on the prepared baking sheets.
- Bake: Bake in the preheated oven for 6-7 minutes, or until the cookie tops turn golden brown. Keep a close eye to prevent burning.
- Cool and serve: Remove cookies from the oven and allow them to cool on the baking sheets. They will continue to cook slightly as they cool. For the softest texture, enjoy them warm rather than completely cooled.
Notes
- Cutting the cold butter into smaller pieces helps with even mixing and a better cookie texture.
- Cornstarch in the dry mix adds to the chewiness and tenderness of the cookies.
- Baking time may vary slightly depending on your oven; watch closely to avoid overbaking.
- Walnuts are optional; omit for a nut-free version or substitute with other nuts if preferred.
- Cookies are best served warm to fully enjoy the gooey chocolate texture.
