Ingredients
The Essentials
- 200g Veal rump, very fresh, butcher's quality
- 50g Tuna in olive oil, drained
- 1 tbsp Capers in vinegar, well dried before frying
- 3–4 tbsp Homemade or sugar-free mayonnaise
- 2–3 pieces Anchovy fillets
- ½ piece Yellow lemon, juiced
- Olive oil for frying and plating
Optional Garnishes
- 1 sprig Fresh rosemary
- Chopped chives or flat-leaf parsley, for garnish
Instructions
- Prepare the tonnato sauce: Using an immersion blender, blend the drained tuna, anchovy fillets, mayonnaise, and freshly squeezed lemon juice until the mixture is smooth, creamy, and well emulsified. Set aside.
- Fry the capers: Thoroughly dry the capers with absorbent paper to remove all moisture. Heat olive oil in a small pan over medium-high heat and fry the capers for 2 to 3 minutes until they become ultra-crispy. Remove them carefully and drain on paper towels to absorb excess oil.
- Prepare the veal tartare: Using a sharp knife, cut the veal rump into small, even cubes to maintain texture. Gently mix the veal cubes with a portion of the tonnato sauce to lightly coat the meat, then season with salt and freshly ground black pepper to taste.
- Assemble the dish: Use a round cookie cutter as a ring mold on serving plates to shape the tartare neatly. Spoon the veal and sauce mixture inside the mold, pressing lightly to compact. Drizzle a little olive oil over the tartare for shine and richness.
- Finish and serve: Sprinkle the fried crispy capers over the top for a burst of texture and flavor. Garnish with fresh rosemary sprig and chopped chives or flat-leaf parsley if desired. Serve immediately to enjoy the freshness and crisp textures.
Notes
- Serve the tartare immediately after preparation to preserve freshness and texture.
- For a lighter version, replace some or all of the mayonnaise with Greek yogurt to reduce fat content while maintaining creaminess.
- The crispy fried capers are essential for adding a contrasting crunch to this otherwise smooth and soft dish.
- Use the freshest veal possible to ensure safety and optimal flavor in this raw preparation.
- Maintain proper hygiene and knife skills when handling and cutting raw veal.
