Ingredients
Nuts and Fruit
- 1 cup shelled unsalted pistachios
- 2 cups fresh raspberries
- Extra crushed pistachios and raspberries for garnish
Dairy and Sweeteners
- 1 cup mascarpone cheese
- 1/2 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 tablespoon vanilla extract
Beverages and Others
- 1 cup brewed espresso or strong coffee
- 2 tablespoons coffee liqueur (optional)
- 12-15 ladyfinger biscuits
Instructions
- Prepare Coffee Mixture: Combine the brewed espresso or strong coffee with the optional coffee liqueur in a shallow bowl. This mixture will be used to soak the ladyfingers, infusing them with deep coffee flavor.
- Whip Mascarpone Mixture: In a mixing bowl, whip together the mascarpone cheese, heavy whipping cream, powdered sugar, and vanilla extract until the mixture is smooth, creamy, and slightly fluffy.
- Add Pistachios: Fold half of the ground pistachios into the mascarpone mixture gently, reserving the remaining pistachios for garnishing the final dessert.
- Soak Ladyfingers: Briefly dip each ladyfinger biscuit into the coffee mixture, ensuring they are moist but not soggy. Lay them in a single even layer at the bottom of your serving dish.
- Assemble Layers: Spread half of the mascarpone and pistachio mixture evenly over the ladyfinger layer, then scatter half of the fresh raspberries on top. Repeat the process with another layer of dipped ladyfingers, mascarpone mixture, and raspberries.
- Chill Dessert: Cover the assembled tiramisu and refrigerate for at least 4 hours, preferably overnight. This resting time allows the flavors to meld beautifully and the dessert to set.
- Garnish and Serve: Just before serving, sprinkle the remaining crushed pistachios and fresh raspberries over the top to add texture and a vibrant finishing touch.
Notes
- Additional serving suggestions: pair this dessert with a crisp salad, garlic bread, or roasted seasonal vegetables for a balanced meal.
- For make-ahead convenience, prepare components separately and assemble the tiramisu just before serving to preserve texture and freshness.
- To enhance flavor, consider adding a splash of acid such as lemon juice or vinegar and a pinch of salt right before serving to brighten the taste.
