Ingredients
For the Base
- 1 tablespoon Peanut Oil or Vegetable Oil
- 4 cups Leftover Rice, chilled
- 1 medium Yellow Onion, diced
For the Aromatics
- 1 tablespoon Freshly minced Ginger
- 2 cloves Garlic, minced
- 3 stalks Green Onions, sliced (separate white and green parts)
For the Protein
- 1 pound Char Siu Pork, diced
- 4 large Eggs, beaten
For the Flavor
- 1/4 cup XO Sauce
Instructions
- Heat the Oil and Cook Aromatics: Heat 1 tablespoon of peanut oil in a large skillet over high heat until shimmering. Add the diced yellow onion and diced char siu pork. Stir continuously for 1-2 minutes until the onion softens and caramelizes slightly.
- Add Ginger, Garlic, and White Green Onions: Stir in the white parts of the green onions, freshly minced ginger, and garlic. Cook for 30 seconds until fragrant and aromatic.
- Add Leftover Rice: Add the chilled leftover rice to the skillet. Use a spatula to break up any clumps of rice. Cook for about 2 minutes, stirring occasionally, until the rice is warmed through and slightly crispy on the edges.
- Incorporate XO Sauce: Pour the XO sauce over the rice mixture. Toss thoroughly to ensure every grain is coated with the sauce. Cook for an additional minute to set the flavors.
- Scramble Eggs: Push the rice mixture to one side of the skillet. Add another tablespoon of oil to the empty side. Pour in the beaten eggs and scramble them gently for 1-2 minutes until just cooked. Then mix the eggs into the fried rice evenly.
- Finish with Green Onion Greens and Season: Stir in the remaining green parts of the green onions and cook for another 30 seconds to combine flavors. Taste the dish and adjust seasoning if necessary.
- Serve: Remove from heat and serve hot as a satisfying main course or flavorful side dish.
Notes
- Use leftover chilled rice for best texture; freshly cooked rice may become mushy.
- Char siu pork adds sweetness and depth; substitute with cooked barbecue pork if unavailable.
- Adjust XO sauce quantity to taste depending on desired spiciness and saltiness.
- Use fresh ginger and garlic for optimal aroma and flavor.
- Cook on high heat to achieve a slight crispness in the rice.
- Make sure to separate the white and green parts of the green onions to maximize flavor layering.
