Ingredients
Marinade
- 1 cup Greek yogurt, plain
- 2 Tablespoons olive oil
- 4 cloves garlic, minced
- 1 Tablespoon Greek seasoning blend or oregano
- 1 lemon, zested and juiced
- 1/2 teaspoon red pepper flakes
Chicken
- 4 boneless skinless chicken breasts
Garnish and Serving
- Chopped parsley, for garnish
- Lemon wedges, for serving
Instructions
- Prepare the marinade: In a bowl, mix together the Greek yogurt, olive oil, minced garlic, Greek seasoning or oregano, lemon zest, lemon juice, and red pepper flakes until well combined.
- Marinate the chicken: Place the boneless skinless chicken breasts in a zip-top plastic bag or shallow dish, pour the yogurt marinade over the chicken, and massage to evenly coat each piece. Seal the bag and refrigerate for 30-40 minutes to allow flavors to meld.
- Preheat the grill: Heat a grill to medium-high temperature, ensuring the grates are clean and lightly oiled to prevent sticking.
- Grill the chicken: Remove the chicken breasts from the marinade, letting excess drip off, and place on the hot grill. Cook for 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked through.
- Serve: Remove the chicken from the grill, let rest briefly, then garnish with chopped parsley and serve alongside lemon wedges for extra brightness.
Notes
- If cooking indoors, preheat the oven to 425°F (220°C).
- Instead of grilling, place the marinated chicken breasts on a lined or lightly sprayed baking sheet.
- Bake for 15-20 minutes, flipping halfway through, until the chicken is thoroughly cooked.
- This marinade also makes the chicken extra tender due to the yogurt’s natural enzymes.
- Serve with a side of grilled vegetables or a fresh salad for a complete meal.
